Shopping List for 2 people and 2 lunches

• 1 cup short grain brown rice
• 1 can azuki bean
• 1 tsp toasted sesame oil
• ½ tsp umeboshi vinegar
• ½ tsp brown rice vinegar
• ½ tsp tamari or shoyu (soya sauce)
• Sprinkle natural salt
• 3 onions
• 2 carrots
• 2 spring onion
• 2 cup large leaf salad mix
• 1 lemon

Azuki Beans with onions (p. 68 of David's book Inspiring Organics)

The caramelized onions mixed with azuki beans give this dish a sweetness that tastes sensational and is excellent for building spleen strength which help the immune system.

Ingredients

1 can azuki beans
3 onions, peeled and sliced into half-moons. (p. 23 of Inspiring Organics)
½ cup water
1 tsp lemon zest
1 tsp toasted sesame oil
1 tsp tamari or shoyu (soya sauce)

Method

• Heat frying pan with sesame oil and sauté onions for 5 min or until transparent.
• Add grated lemon zest and water to prevent burning. Add tamari or shoyu. Sautee tossing occasionally for about 30 min on low heat.
• Drain beans, mix together with onions and sauté for 1 minute and serve.

Brown Rice (p. 82 of David's book Inspiring Organics)

When cooking rice, it is more efficient to prepare extra to use for other meals, such as stir-fries. Place extra rice in a sealed container in the fridge where it can last for up to 3 days.

Ingredients

1 cup short grain brown rice
2 cups of water
1 teaspoon brown rice vinegar
Pinch of natural salt

Method

• Place rice with water in a pan. Add salt and simmer on a low heat with lid on for 40 minutes.
• Splash with brown rice vinegar and serve.

Pressed Spring Onion and Carrot (p. 26)

This quick pressed salad adds colour and flavour to your meal.

Ingredients

3 carrots, cut into diagonals
2 spring onion, cut into diagonals
½ teaspoon umeboshi vinegar

Method

• Place all ingredients in salad bowl.
• Hand press for 1-2 minutes.

Exotic Tonic Greens (p. 38 of Inspiring Organics)

‘Exotic tonic greens’ is the name I attribute to a large leaf salad mix. It is the most powerful food for cleansing the body and carries high levels of chlorophyll. Chlorophyll is the life’s blood of the plant and has a rejuvenating effect on the body.

Ingredients

2 cup large leaf salad mix
1 tablespoon lemon juice
Pinch natural salt

Method

• Place greens into a salad bowl, add lemon and salt, fold in gently and serve.
